Protein Cookie Dough Cheesecake Bars
Ingredients: Cookie Dough
- 3/4 cup drained and rinsed chickpeas
- 1/4 cup peanut butter
- 1 1/2 tsp. vanilla extract
- 40g vanilla protein powder
- 1/2 cup baking stevia
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 3 tbsp. chocolate chips
Ingredients: Cheesecake
- 6 oz. fat free cream cheese
- 2 oz. nonfat plain Greek yogurt
- 60g vanilla protein powder
- 1/2 cup baking stevia
- 1/2 tsp. vanilla extract
Instructions
- Drain and rinse beans
- Blend beans with nut butter and flavor extracts until smooth.
- Add protein powder, sweeteners, baking soda, and salt; blend again until combined.
- Empty cookie dough into a 7"x5" or 8"x6" dish lightly coated with cooking spray.
- Clean blender, then add cream cheese and Greek yogurt, blending until smooth.
- Add protein powder, sweetener, and vanilla extract; blend again until no clumps remain.
- Spoon cheesecake mixture over cookie dough and place in the freezer for 2-3 hours until firm.
- Cut into eight pieces and serve chilled. Enjoy!
