Blueberry Protein Coffee Cake
Ingredients:
- 1/2 cup oats
- 1 egg
- 1/2 cup blueberries
- 1 scoop cinnamon bun whey protein
- 1/4 cup Greek yogurt
- 1/4 to 1/3 cup black coffee
- 2 TBS apple sauce
- 1 tsp baking powder
Topping:
-Glaze: 1tsp Vanilla + 2tbs vanilla protein powder + 2tsp Stevia + 3 tbs almond milk
-cinnamon
Directions:
- preheat oven to 350 F
- blend all ingredients together well except cinnamon topping and glaze
- pour into 2 greased or oiled up ramekins
- sprinkle cinnamon on top
- bake for 20-25 minutes or until toothpick comes out clean
- Combine glaze ingredients and swirl on top
