High Protein Healthy Muffins

 

Ingredients: 

  • 1/2 cup Blueberries
  • 2 serving (serving = 3 tbsp) Egg Beaters 100% Liquid Egg Whites
  • ¬†1 serving (serving = 1 scoop)¬†Rule1 Whey Blend Protein
  • ¬†4 serving (serving = 1/4 tsp) Tone's 100% Pure Vanilla Extract
  • ¬†8 serving (serving = 1/2 tsp) Truvia Baking Blend
  • ¬†0.2 serving (serving = 1 cup) Silk Pure Almond Milk - Unsweetened Vanilla
  • ¬†0.2 serving (serving = 1/2 cup)¬†Plain Greek Yogurt
  • ¬†2 serving (serving = 2 pancakes) ¬†Pancake Mix

Directions:

-Preheat oven to 350 degrees 
-Mix all ingredients in large bowl
-Grease muffin tin with coconut oil
-Fill up 4/6 large muffin tin holes or if using a regular size muffin tin the batter
-Bake for 22 minutes
