FlapJacked Banana Bread Pudding

INGREDIENTS 
1 cup FlapJacked Banana Hazelnut Mix
1/2 cup water 
3 large eggs 
1 large, ripe banana
1 cup milk (we used almond milk)
2 TBSP chopped walnuts
1/4 cup maple syrup

INSTRUCTIONS 
Start by making the waffles. Combine FlapJacked mix, 1/2 cup of water and 1 large egg into a bowl and stir well. Cook on a waffle iron per manufacturer's instructions (you should end up with about two waffles, depending on the size of your waffle iron). Set waffles aside.

Pre-heat oven to 350˚. Place banana into a large bowl and mash with a fork. Add in two eggs and milk and stir completely. Cut up waffles into small pieces and stir into the mix. Add in chopped walnuts and stir again. Pour batter into a lightly greased round or 9x9" square casserole. Pour in batter and place in the oven to bake for 45 minutes (until cooked through completely). Remove and let cool for 10 minutes. Pour syrup over the top and cut into 8 equal pieces.  ENJOY!
